When my father was a child in 1948, he recalls a different way of life. Sugary cereals like Fruit Loops, Captain Crunch, and Fruity Pebbles did not line the aisles of the grocery store. Children did not have mid-morning snacks at school and were told not to spoil their appetites by eating before dinner.
Saturated fats were not demonized as they are today. Lard and tallow were found in every kitchen, and red meat was a dietary staple. Most people had gardens and relied on the skill of canning to get them through the winter.
Obesity and chronic disease in childhood were uncommon, while childhood obesity, food allergies, asthma, and autism plague the children of today!
The largest category of ultra-processed foods are snack foods. The problem with snacking is that you spike insulin every time you eat. Carbohydrates create the most significant spike in insulin. Not only are we snacking, but we’re snacking on the worst foods!
The pancreas is constantly working to pump out insulin to remove sugar from the blood. This eventually leads to insulin resistance, which is behind almost every chronic illness, including a fatty liver, high blood pressure, diabetes, obesity, inflammatory diseases, mood disorders, dementia, and more.
In 1948, we did not have not have ultra-processed food calories. Today, 65% of the teenage diet comes from ultra-processed food calories. This number is around 50% for adults and 45% for toddlers.
Seed oils, such as soy, corn, cottonseed, and canola, are the worst ultra-processed food ingredients. Around 25% to 30% of all our calories come from seed oils.
Grain-based starches generate 220 billion dollars per year! Highly processed industrial starches such as modified food starch, modified cornstarch, and maltodextrin spike blood sugar—often higher than consuming sugar does!

Surprisingly, one of the earliest signs of dementia involves the retina. There is a high correlation between problems in the retina and problems in the brain. Problems with night vision or central vision, floaters, and light sensitivity issues are the earliest signs of dementia.
Some people develop amyloid-beta plaquing on the retina and may experience problems differentiating shades of grey and other colors. Researchers have found high levels of microbes, typically found in the mouth, in the brains of Alzheimer’s patients.
When people die from dementia, it’s usually caused by an infection such as a UTI or lung infection. For some people, surgery can be too much on the body and lead to death. Some people with dementia have a slow, progressive degeneration of the brain to the point they’re bedridden and stop eating and drinking, which ultimately leads to death.
Focus on cleaning your brain and reducing inflammation for dementia prevention. The glymphatic system cleans the brain, mainly at night, which is one of the primary purposes of sleep. This system removes malformed proteins and plaquing and rejuvenates the brain.
Anything that inhibits sleeping may increase your risk for Alzheimer’s, heart attacks, strokes, cancer, blood sugar issues, and type 2 diabetes. Sleep apnea can also be problematic. You need 8 to 9 hours of sleep! Alcohol significantly interferes with REM sleep and is very damaging to brain health.
To prevent Alzheimer’s, you must flood the brain with oxygen. Exercise is one of the best ways to do this! Exercise stimulates the growth of brain cells and the hormone BDNF (brain-derived neurotrophic factor).
Adequate sun exposure and high amounts of vitamin D can help support healthy sleep.
A diet high in sugar and carbohydrates can starve your neurons. Brain cells love ketones! To get into ketosis, you must lower your carbohydrate intake. If you have any early signs of dementia, try taking ketones as a supplement or MCT oil. Niacin may also be helpful. Take 50 mg daily, slowly increasing to 500 mg per day.

Today, we’re going to talk about a dangerous ingredient that’s worse than high-fructose corn syrup, sugar, starches, and seed oils! It’s a potent neurotoxin, damages reproductive organs, and is classified as a Class A carcinogen by the EPA.
You won’t find this dangerous ingredient on a food label because it’s a byproduct, not an ingredient used to make the food.
Acrylamide is created when you combine a specific protein with refined sugar such as glucose, dextrose, glucose syrup, or maltodextrin under high heat.
Saturated fats prevent the formation of acrylamide. If junk foods were made with saturated fat like tallow, this could significantly reduce cancer risk.
Here are some foods to avoid that contain acrylamide:
•Corn chips
•Potato chips
•French fries
•Baked goods
•Crackers
•Cookies
•Cereal
•Bread crust
•Roasted coffee
To avoid acrylamide, cook with tallow, coconut oil, or butter, and use natural sugar like honey or sugar cane. Slow cooking reduces the formation of acrylamide. Focus on consuming whole foods and avoid refined and processed foods.
If you eat junk food, pair it with something to counter the effects of acrylamide. Cruciferous vegetables contain protective compounds that protect against acrylamide. Garlic, sprouts, sauerkraut, citrus, bell peppers, green tea, and spirulina also have protective effects.

When the amino acid asparagine combines with refined sugar and is heated over 285 degrees Fahrenheit, a Maillard reaction produces the byproduct acrylamide.

He will be actively working against big food companies, big chemical companies, and big pharma, so naturally, he’s getting a lot of pushback. The U. S. spends over 4.1 trillion dollars each year on healthcare, yet we’re at the bottom as far as health. Why?
Here's what I think can improve America’s health!
1. Change the institutional foods
Prepackaged foods are given to people in nursing homes, prisons, schools, hospitals, and other public institutions. These institutional foods are very low-quality, highly processed foods. The health of the people in these institutions would quickly improve by simply removing the refined sugars, starches, and oils from their diets.
2. Address the subsidized foods
Subsidized foods are paid for by taxpayers. Corn, soy, wheat, sugar, and rice are the most highly subsidized foods. Changing the types of foods that are subsidized and investing in small farmers can significantly improve this problem.
3. Changing GRAS
“Generally recognized as safe” is a term used by the FDA for products that have been safety tested by their own manufacturers. To avoid conflict of interest, these tests should be conducted by third-party independent companies.
4. Change food fortification
Synthetic folic acid and iron fortification of food can cause serious problems for many people.
5. Disallow tax dollars from being used for drugs
Every year, 40 billion dollars of taxpayer money is used to pay for medical research to develop new drugs.
6. The rounding rule
If a product contains less than .5 grams of an ingredient, it can be rounded down to 0. This is misleading and should be eliminated. People need to be more aware of what's really in their food. Companies also need to be forced to raise the quality of the ingredients in their products.
7. End sun phobia
Sun phobia paired with low RDAs for vitamin D is contributing to massive vitamin D deficiency in the population, putting people at risk for disease.

What you eat for breakfast affects your ability to focus, your creative ability to solve problems, and how well you sleep at night.
A carb-heavy breakfast promotes insulin resistance, which inhibits your ability to absorb fuel. The first place you’ll notice this is in your brain.
Ketones are a much better fuel for your brain than sugar. To make ketones, you need to lower your carbs and sugar. You can also produce ketones by fasting. While fasting, your body must convert to making ketones for energy.
Carbohydrate breakfast foods leave you hungry within an hour-and-a-half of eating. Sugary cereal is a poor choice for breakfast. Magic Spoon or keto-friendly granola without added sugar is a better option.
Oatmeal is generally one of the most ultra-processed foods. If you want to eat oatmeal for breakfast, look for regular oatmeal without sugar. The best option for oatmeal is steel-cut oats, although they take longer to cook.
Oatmeal and wheat are heavily sprayed with glyphosate, which has been shown to cause cancer and problems with your gut. Choose organic to avoid this problem.
Replacing your breakfast food with protein such as meat, bacon, and eggs can significantly change your energy levels and cognitive function. Eggs and bacon are the perfect healthy morning breakfast. You can also add avocado or cheese. Cheese is very nutritious, a good source of protein, and has good bacteria due to the fermentation process.
Yogurt is a great breakfast option. Choose organic Greek or Bulgarian yogurt without added sugar, or make your own yogurt. Instead of giving your kids Wonder bread, try a sprouted bread like Ezekiel bread. Add peanut butter for extra protein. Red meat and pork sausage are also great breakfast foods.
It’s important to prioritize sleep! Losing just one hour of sleep can significantly affect your blood sugar and cognitive state.

Magnesium is involved in hundreds of biochemical reactions that help prevent common problems such as atrial fibrillation, high blood pressure, insomnia, heart disease, leg cramps, and fatigue. Many people are magnesium deficient, but it’s almost impossible to test! Only 1% of your magnesium is in the blood—the rest is inside the cells.
Some common causes of magnesium deficiency include:
•Genetic weakness
•Low stomach acid
•Prediabetes or diabetes
Magnesium depends on vitamin D, which many people have a genetic problem with. Vitamin D deficiency inhibits the proper function of magnesium in the body. You need a minimum of 10,000 IU of vitamin D daily.
Magnesium glycinate has an 80% absorption rate and also helps with sleep. Magnesium controls calcium, so you likely have excess calcium if you're magnesium deficient. Too much calcium causes cramping in the calves, high blood pressure, and arrhythmias.
Smoking, alcohol, soda, refined sugars, starches, and certain medications can all contribute to a magnesium deficiency.
Leafy greens, pumpkin seeds, chocolate, and nuts are the best food sources of magnesium.
You won't see results if you don’t give magnesium enough time to work. It takes at least 1 to 3 months to see results from magnesium.
Digestive issues like constipation or diarrhea can greatly affect your ability to absorb magnesium. Chronic stress and exercise can increase your magnesium requirements.
You can increase magnesium absorption by spreading your doses throughout the day rather than taking it all at once. Try drinking apple cider vinegar mixed with water to acidify the stomach and increase magnesium absorption.
